Having put myself through university working in the restaurant industry, I’ve long known the restaurant industry is a ‘first impression business’. And while any first impression is critical, it’s truly the second impression that really counts; when an encore visit determines whether a place has the opportunity to warrant your 'Fandom' and continued patronage.
In the case of my relationship with Cava - a tapas purveyor secreted off a courtyard just north of Yonge and St. Clair - the restaurant continues to make great impressions far beyond the second… and third, and fourth visit.

Cava Restaurant serves a creative mix of Spanish and Iberian-inspired cuisine, their mainstay being unique and mouth-watering tapas. An evolving menu of sustainable and ethical ingredients offers fresh interpretations of familiar culinary themes and - get this - includes a selection of over 40 wines by the glass and over 200 different bottles enhance the experience (Yes please!).
The dining room is moodily lit and unassuming. The design is well-appointed and thoughtful without being showy or competing with the food for attention. I especially love the comfortable arm chairs - they feel like a luxury when it's not uncommon to find ourselves precariously perched on a backless stool these days.
I’ll admit, while Yonge and St. Clair is a triple AAA location, I wondered if the mini mall in which Cava is located might impact their ability to thrive as a coveted culinary establishment. However, co-owners Niall McCotter and Doug Penfold (also the executive chef) made the most out of their hide-away. The challenge of reserving a table sometimes is certainly a testament to their success!

For those who love food as much as I do, this is a culinary destination worth trying.
